What is Coconut Palm Sugar?

Its’ growing popularity, particularly in the United States, is due in part, to American consumers’ increasing consumption of natural foods and the growing trend for healthier living. Coconut palm sugar is often used as a popular substitute for white and brown sugars. It is a natural sweetener that is collected from the nectar located in the flower buds of coconut palm blossoms and is a very common ingredient that is used in both sweet and savory dishes in many Asian cuisines. To collect coconut palm sugar the liquid sap is first boiled into a hardened sugar. It is then transformed into a paste, or a rock-like mass called jaggery, where it is distributed and sold.
