Do you know how easy it is to adulterate honey with cheap syrups? High fructose corn syrup (HFCS) has the same sugars in it as honey – it’s cheap and it’s impossible to detect in honey without a measurement of the stable carbon isotope ratio.

The task is not always easy because the bad guys are innovative too. They use other syrups when they can get them. Syrups that are even harder to detect. It can get hard and expensive to assure yourself of purity. But this single test - which is part of the official AOAC test for C4 sugars in honey - can spot HFCS in honey which is historically the easiest adulteration trick there is.
